RED SAUCE PASTA RECIPE

RED SAUCE PASTA
Ingredients:
For boiling pasta-
250 gm Pasta
4 Cup Water
2 tablespoons Oil
Salt as per your taste
For making sauce-
4-5 Tomatoes (red firm)
2 tablespoons Oil
1/2 teaspoon Red chilli flakes
1 tbsp cheese Italian herb seasoning (optional)
1/2 teaspoon Oregano
1/2 teaspoon Basil (dry) (optional)
1/4 teaspoon Black pepper powder
2 tablespoons Tomato Ketchup
Salt as per taste
Cheese for sprinkling

Step 1:
Put water in a pan and heat it.
Add salt, and olive oil.
Now add your pasta in it and boil it for 7-8 minutes (or as per your packet instructions).
Your pasta should be al dente cooked (cooked as to be still firm when bitten)
Now drain the water and keep it aside.
Step 2: To make red sauce
For this, you would need firm, red tomatoes. If you use sour/desi tomatoes, then your sauce will turn out to be sour too and the pasta would be extra tangy.
Cut the tomatoes from the top, removing their woody part/pith.
Put them in boiling water for 5-6 minutes(till the skin starts peeling off)
Now peel off the skin nicely and roughly chop the tomatoes.
Grind them in a mixie.
Now heat a pan and pour extra olive oil in it.
Add finely chilli flakes and stir them together.
Now pour the tomato paste and saute it.
Add salt, black pepper powder, cheese and Italian herb seasoning(or any other Italian seasoning), oregano, and dry basil leaves.
Now add about 1-2 tbsp of tomato ketchup.
Mix it and put it on low heat for 5-6 minutes till the sauce thickens and the quantity halves.
Step 3:
Add the boiled pasta to the sauce and mix it well.
Now serve it hot.
You may sprinkle some parmesan cheese/grated processed cheese on top.
And now it's done! Enjoy it with your family and friends, or if you're too hungry, just eat it all yourself!
